Job Description

We are seeking an experienced and highly skilled Head Sushi Chef to lead our culinary team in delivering exceptional sushi and sashimi dishes. This is a fantastic opportunity for an individual with a passion for Japanese cuisine and a creative flair to innovate and inspire a team in a bustling kitchen environment. As the Head Sushi Chef, you will be responsible for overseeing all aspects of sushi preparation, from ingredient selection to plating. The ideal candidate will have a meticulous attention to detail, a commitment to food safety and hygiene, and a proven track record of producing high-quality, authentic sushi. You will play a critical role in menu development, staff training, and maintaining high standards of service. A deep understanding of traditional Japanese techniques as well as modern cooking trends will be essential in elevating our restaurant's culinary offerings.


Responsibilities

  • Oversee daily operations of the sushi bar and ensure smooth functioning.
  • Develop new sushi dishes and update the menu based on seasonal ingredients.
  • Ensure all sushi and sashimi products meet our high standards of quality.
  • Lead, train, and mentor sushi chefs and kitchen staff with culinary skills.
  • Maintain hygiene and safety standards in compliance with regulatory requirements.
  • Manage inventory, ensuring the freshness and availability of necessary ingredients.
  • Collaborate with the management team in planning and executing special events.
  • Monitor food costs and work within the budget to maximize profit margins.
  • Foster a positive kitchen atmosphere while encouraging creativity and excellence.
  • Engage with guests, receiving feedback to improve sushi dining experiences.
  • Implement portion control to manage food waste and improve efficiency.
  • Coordinate with suppliers to acquire the finest quality fish and produce.

Requirements

  • Extensive experience in sushi preparation, including traditional and modern techniques.
  • Culinary degree or equivalent professional certification in Japanese cuisine preferred.
  • Strong leadership skills with the ability to motivate and develop a team.
  • Excellent understanding of kitchen safety, hygiene practices, and food handling procedures.
  • Ability to work under pressure in a fast-paced environment without compromising quality.
  • Proven track record of designing and executing successful menu items.
  • Positive attitude and commitment to delivering outstanding customer service.
