Job Description

The Head Sushi Chef is a pivotal role in our culinary team, responsible for crafting exquisite sushi dishes and managing the sushi kitchen's operations. This position demands expertise in preparing a variety of sushi dishes in accordance with traditional and innovative recipes, while ensuring the highest standards of food safety and hygiene. The ideal candidate will have a deep understanding of sushi ingredient selection, sushi equipment maintenance, and culinary creativity to enhance our menu offerings. As a leader, the Head Sushi Chef must also ensure that the staff is well-trained, motivated, and delivering excellent customer service. Our goal is to provide an exceptional dining experience that reflects our commitment to quality and innovation.


Responsibilities

  • Prepare a wide variety of sushi dishes, including maki, nigiri, and sashimi.
  • Design new sushi menu items and specials with creativity and authenticity.
  • Oversee the daily operations of the sushi kitchen, ensuring efficiency.
  • Train and mentor kitchen staff to ensure consistent, high-quality output.
  • Maintain cleanliness and organization of all sushi preparation areas.
  • Monitor inventory levels and manage ordering of sushi-related supplies.
  • Ensure compliance with all food safety and sanitation regulations.
  • Collaborate with management to meet customer expectations and improvements.
  • Coordinate with suppliers to obtain best quality ingredients at favorable prices.
  • Provide outstanding customer service by engaging with patrons as needed.
  • Perform regular maintenance and cleaning of all sushi preparation equipment.
  • Review customer feedback to improve the quality of food offerings continually.

Requirements

  • Proven experience as a Head Sushi Chef or in a similar role.
  • Expertise in various sushi preparation techniques and culinary arts.
  • Excellent knowledge of sushi ingredients, flavors, and presentation styles.
  • Strong leadership and organizational skills to manage kitchen staff effectively.
  • Excellent communication skills for training and interacting with patrons.
  • Ability to work flexible hours, including evenings and weekends.
  • Certification in food safety and hygiene practices is highly preferred.
