About The Job
Based at the Mandarin Oriental Downtown, Dubai within the Food and Beverage Service section of our Greek Restaurant in Dubai, the Bar Manager, will assume full responsibility of all related operational, administrative and financial aspects of the bar and will be fully responsible for the overall beverage program of the hotel and the implementation and maintenance of cocktail and beverage menus. Bar Manager reports to the Restaurant General Manager.
As a Bar Manager, you will be responsible for the following duties:
Manage the daily operations of the bar, ensuring smooth service, consistent beverage quality, and adherence to brand and service standards.
Lead, train, and motivate the bar team to deliver exceptional guest service while maintaining a strong floor presence and professional conduct.
Curate and update an authentic Greek-inspired beverage menu, including cocktails, wines, and spirits, in collaboration with the restaurant leadership and sommelier.
Monitor stock levels, control beverage costs, and oversee ordering, receiving, and storage to minimize wastage and ensure quality.
Engage with guests to recommend drinks, handle feedback, and ensure an elevated and personalized bar experience aligned with luxury service standards.
Ensure all health, safety, and licensing regulations are met, maintaining the highest standards of hygiene, cleanliness, and bar maintenance.
As a Bar Manager, We Expect From You
High School qualification required; a degree or diploma in Hospitality, Hotel Management, or Wines & Beverages is preferred.
Minimum 3 years as a Bar Manager in a luxury setting, with at least 5 years in a 5-star hotel environment and pre-opening experience preferred.
Experience in at least two global regions (Asia, Europe, North America, Middle East); work experience in Greece is an added advantage.
Strong knowledge of bar service standards, beverage menu creation, inventory control, costing, POS systems, and HACCP compliance.
Proven ability to lead and develop a diverse team, with excellent interpersonal and performance management skills.
Ability to craft innovative cocktails and beverage programs, think outside the box, and deliver exceptional guest experiences through proactive service.
