Head Chef | Fine Dining | Japanese & International Cuisine

Location: Fujairah, UAE | Full-time | On-site

We are seeking an accomplished Head Chef to lead the culinary operations of a premium fine-dining concept in Fujairah.

This is a hands-on leadership role for a chef with proven fine-dining experience and strong professional expertise across both Japanese and International cuisine.

The successful candidate will combine culinary creativity with operational discipline, maintaining exceptional standards of food quality, presentation, consistency and kitchen performance.

• Lead all day-to-day kitchen operations and maintain exceptional fine-dining standards.
• Develop and continuously refine Japanese and International menus, seasonal dishes and signature concepts.
• Ensure consistency in flavour, preparation, portioning, plating and presentation.
• Lead, train and develop a professional multicultural kitchen brigade.
• Maintain recipe standards, plating guides, kitchen SOPs and quality-control procedures.
• Manage food costing, purchasing, inventory, portion control and wastage to support profitability.
• Work closely with suppliers to source premium ingredients, including quality seafood and Japanese products.
• Maintain strict standards of food safety, hygiene and HACCP compliance.
• Ensure smooth service execution and strong coordination across the kitchen.
• Collaborate with management on menu innovation, seasonal offerings and the overall dining experience.

You should have proven senior culinary leadership experience within a fine-dining or premium restaurant environment, together with strong hands-on knowledge of:

• Japanese cuisine and culinary techniques
• International / contemporary global cuisine
• Fine-dining menu development and refined plating
• Kitchen leadership and team development
• Food costing and operational control
• Quality, consistency and food-safety standards

Relevant professional experience in Fine Dining, Japanese cuisine AND International cuisine is essential for this position.
