Education: M.Sc./M.Tech in Food Technology or a related field. Relevant technical degrees in Food Science, Bakery Science, Cereal Technology, Food Engineering, or similar areas will be preferred.

Experience:

 Minimum 4-6 years of relevant experience in baking applications, technical service, R&D, food technology, or bakery product development.

 Hands-on experience in biscuit development, baking lab operations, pilot plant trials, and baking line handling will be preferred.

Job Purpose: As a Senior Research Associate – Technical Service, FBB India, the role holder will be responsible for supporting and delivering high-quality technical results across baking projects, with a key focus on biscuits and baking line operations. The role requires a strong understanding of baking applications, lab and pilot-scale trials, biscuit processing, equipment handling, documentation, and stakeholder coordination. The individual will be expected to work independently, run lab and pilot scale trials, and contribute to the growth of the Technical Service department.

Tasks and Responsibilities:

 Plan and execute lab and pilot-scale baking trials, ensuring optimum use of resources, equipment, ingredients, and manpower.

 Manage biscuit projects including product development, ingredient evaluation, formulation, process optimization, and troubleshooting.

 Operate and manage the biscuit baking line, including mixing, dough handling, forming, baking, cooling, and related process steps.

 Monitor critical baking parameters as per SOP while maintaining lab discipline, hygiene, safety, and GLP standards.

 Deliver project outcomes in line with business goals, timelines, and quality expectations with minimal supervision.

 Maintain accurate documentation, high-quality data capture, reporting, and traceability of all lab and trial work.

 Provide technical support to external and internal stakeholders.

 Guide and train research associates, interns, externals, distributors, and formulators on baking applications and methods.

 Support new method development, validation, equipment procurement, vendor coordination, and capability building in the baking lab.

 Communicate project updates, risks, findings, and recommendations effectively while influencing stakeholders through technical expertise.

Technical Competencies

The candidate should have:

 Strong understanding of bakery ingredients, biscuit processing, and baking technology.

 Ability to independently handle data, analyze results, and develop new methods.

 Experience in operating baking equipment and managing baking line trials.

 Knowledge of scale-up, customer trials, and application-based technical support.

 Good understanding of food safety, hygiene, quality systems, and lab practices.
