Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.
About The Position
Wynn Al Marjan Island is currently seeking an Training Manager to join the resort’s Kitchen Stewards team.
The Primary Duties And Responsibilities Of This Role Are
Prepare and implement training programs for new and existing Team Members covering stewarding and food hygiene topics.
Coach, motivate, counsel, discipline, and evaluate team members and trainers.
Continuously assess Food & Beverage standards and adjust training plans to maintain team member competency levels.
Develop organizational training strategies and manage delivery, measurement, and follow-up as needed.
Provide annual budget forecasts for training programs.
Maintain strict confidentiality on all matters at all times.
Assist and support the Assistant Director in planning and overseeing kitchen cleanliness and sanitation activities.
Schedule and conduct daily kitchen inspections to ensure compliance with health and fire department regulations.
Maintain accurate training records and relevant documentation.
Handle administrative tasks and scheduling related to training and development.
Perform duties assigned by the Assistant Director and assume responsibilities in their absence.
Enforce strict cleanliness and hygiene standards in all food preparation and service areas, adhering to HACCP protocols and local regulations.
Develop and maintain Standard Operating Procedures (SOPs) for training kitchens to ensure efficiency, consistency, and compliance with HACCP and ISO 22000 standards.
Actively mentor stewarding team members across Wynn properties to nurture future leaders.
Design and implement comprehensive training programs for stewarding staff aligned with operational needs and health regulations.
Conduct hands-on training in sanitation procedures, equipment handling, chemical safety, and HACCP protocols.
Monitor and evaluate training effectiveness through performance assessments and feedback mechanisms.
Maintain the departmental training calendar and coordinate with section heads for training attendance.
Manage training records, certifications, and compliance documentation.
Lead onboarding sessions for new recruits to ensure smooth integration into the team.
Schedule and facilitate refresher courses and cross-training opportunities.
Partner with Learning & Development departments to identify skill gaps and training needs.
Perform any other duties as assigned.
About You
Minimum of 2 years’ experience as a training facilitator or in a training management role
Professional training certifications preferred (e.g., Train-the-Trainer or equivalent)
Demonstrated ability to design and deliver engaging training programs, including instructor ‑ led sessions, on ‑ the ‑ job training, and coaching
The minimum educational qualification required is completion of secondary school; higher academic credentials are considered an asset.
Due to gaming operations and associated regulatory requirements, the minimum age for employment is 21 years.
Minimum of 8 years of experience in the 5-star hotel industry or integrated resort, of which at least 5 years must be in stewarding operations across multi-outlet or chain food and beverage environments.
Knowledge of the correct use, handling, and storage of cleaning chemicals.
Proficiency in MS Office and hotel operating systems.
HACCP certification is an advantage.
ServeSafe certification is an advantage.
Basic food safety knowledge is compulsory.
Strong communication and organizational skills.
Positive attitude and strong work ethic.
Physically fit and capable of cleaning high areas, handling large equipment, and heavy lifting.
Good interpersonal skills.
Team player who responds quickly to demands and thrives in a high-pressure work environment.
Flexible with work schedules and able to work in shifts based on business needs.
Fluency in English is essential; proficiency in additional languages is considered an asset.
Experience with payroll systems such as Time Manager or equivalent.
Familiarity with BirchStreet or other purchasing systems is an advantage.
