We are seeking a highly skilled and creative Sushi Chef to join our esteemed culinary team. The ideal candidate will have a deep passion for Japanese cuisine and a refined technique in crafting exquisite sushi dishes. As a Sushi Chef, you will be responsible for preparing authentic sushi alongside a variety of innovative sushi rolls and sashimi with impeccable presentation that reflects the intricate art form of sushi making. This role requires a keen eye for detail, a commitment to quality, and an understanding of the balance of flavors. Responsibilities

  • Prepare various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Collaborate with the culinary team to create new menu items, including rolls and specials.
  • Ensure all sushi are made with quality, consistent portions, and presentation standards.
  • Manage inventory of fish and other sushi ingredients by coordinating with suppliers regularly.
  • Conduct regular quality checks to ensure products meet required food safety standards.
  • Keep a clean and safe working environment and comply with all health and safety regulations.
  • Train and mentor junior kitchen staff in sushi preparation and presentation techniques.
  • Communicate effectively with other kitchen staff to ensure efficient service and optimal guest experience.
  • Develop decoration and garnish ideas for sushi dishes to enhance presentation.
  • Monitor food stock and place orders as needed, reducing waste where possible.
  • Provides insight on improving process efficiencies for preparing sushi as per demand.
  • Continuously seeks feedback from patrons and adjusts recipes to improve customer satisfaction.

Requirements

  • Proven experience as a Sushi Chef with demonstrated sushi-making skills and techniques.
  • Strong knowledge of food hygiene and safety standards required in the food industry.
  • Ability to work efficiently under pressure in a fast-paced kitchen environment.
  • Excellent knife skills and understanding of various sushi techniques and traditions.
  • Ability to work flexible working hours, including nights and weekends, as needed.
  • Good communication skills with the ability to collaborate with kitchen and service staff.
  • A genuine passion for the art of sushi-making and Japanese culinary traditions.
