About Wynn Al Marjan Island:

On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theatre, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

About The Position

Wynn Al Marjan Island is currently seeking a Manager - Administration to join the resort’s Kitchen Stewards team.

Responsibilities

The primary duties and responsibilities of this role are:

  • Attend daily briefings in designated areas conducted by direct leaders and participate in shift briefings.
  • Proficiently operate Food & Beverage management systems including BSS, Maximo, Time Manager, Virtual Roster, and other relevant communication and operational platforms.
  • Manage departmental and team member performance, ensuring prompt and courteous service and adherence to resort standards and policies.
  • Support Assistant Managers and Supervisors in developing operational and audit-based checklists.
  • Ensure all audit-required documentation is up-to-date and signed off by department leaders.
  • Oversee daily productivity measurement tools (e.g., Time and Motion studies), identify redundancies, and report anomalies to the Executive Director Back of House.
  • Monitor and manage contract vendor performance, ensuring compliance with resort standards and addressing deviations promptly.
  • Oversee departmental recruitment, assist P&C with hiring processes, and conduct interviews.
  • Conduct training sessions for Managers, Assistant Managers, and colleagues as needed.
  • Review monthly P&L reports from BSS systems to optimize resource use and identify training or procedural needs.
  • Provide analysis of Operating Supplies and Equipment (OSE) quality and performance to the Executive Director Back of House.
  • Lead the Preventive Maintenance and deep cleaning programs for Food & Beverage areas, ensuring accurate recordkeeping.
  • Investigate complaints, determine root causes, and implement corrective measures to prevent recurrence.
  • Maintain inventory control and procure equipment and supplies to support Catering and Culinary Departments within budget.
  • Assist in analyzing and controlling costs related to cleaning supplies, equipment breakage, and silverware loss, implementing measures to reduce waste.
  • Perform comprehensive assessments to identify hazards and vulnerabilities across different business units.
  • Continuously monitor risk exposure, measure the effectiveness of controls, and provide detailed reports to management and stakeholders.
  • Assist and perform duties assigned by the Assistant Director and assume responsibilities in their absence.

About You

The ideal candidate for this position will have the following experience and qualifications:

  • The minimum educational qualification required is completion of secondary school; higher academic credentials are considered an asset.
  • Due to gaming operations and associated regulatory requirements, the minimum age for employment is 21 years.
  • Minimum of 8 years of experience in the 5-star hotel industry or integrated resort, of which at least 5 years must be in stewarding operations across multi-outlet or chain food and beverage environments.
  • Knowledge of the correct use, handling, and storage of cleaning chemicals.
  • Proficiency in MS Office and hotel operating systems.
  • HACCP certification is an advantage.
  • ServeSafe certification is an advantage.
  • Basic food safety knowledge is compulsory.
  • Strong communication and organizational skills.
  • Positive attitude and strong work ethic.
  • Good interpersonal skills.
  • Team player who responds quickly to demands and thrives in a high-pressure work environment.
  • Flexible with work schedules and able to work in shifts based on business needs.
  • Fluency in English is essential; proficiency in additional languages is considered an asset.
  • Experience with payroll systems such as Time Manager or equivalent.
  • Familiarity with BirchStreet or other purchasing systems is an advantage.
