About Wynn Al Marjan Island:

Wynn Al Marjan Island will be the first integrated resort in the UAE. Set to open in 2027, the resort will be located 50 miles from Dubai International Airport in the emirate of Ras Al Khaimah. The resort will offer 1,530 rooms and suites, 22 restaurants, lounges, and bars, a theater, and a beach club. It will feature multiple swimming and wading pools, water features, a five-star spa, a salon, a shopping promenade, and a celebrations and events center.

About The Position

Wynn Al Marjan is currently seeking a Gaming Beverage Manager to join the resort’s Food & Beverage team.

Responsibilities

The primary duties and responsibilities of this role are:

• Work with Executive Director Beverage, Assistant Director Beverage and Director – Gaming Beverage to establish par levels for supplies, liquor, beer, wine, and equipment across all gaming bars, lounges, and VIP gaming areas, completing requisitions to replenish shortages or meet anticipated guest volume.
• Collaborate on the implementation of policies, operating procedures, training programs, directives, menus, work schedules, and service standards specifically designed for the gaming’s high-energy, luxury environment.
• Maintain complete knowledge of all liquor brands, beers, and non ‐ alcoholic selections available in gaming outlets, including premium offerings tailored to VIP clientele and gaming guests.
• Ensure familiarity with the characteristics and descriptions of wines and champagnes served by the glass and bottle, designated glassware and garnishes, preparation methods, portion sizes, presentation, and pricing—especially for signature cocktails and exclusive gaming menus.
• Partner with Executive Director Beverage, Assistant Director Beverage and Director – Gaming Beverage and Brand Partners to review and establish service standards, staffing levels, recruitment strategies, and alignment with gaming-specific SOPs and guest service expectations.
• Uphold the highest standards of health, sanitation, and cleanliness within all gaming beverage areas, ensuring strict compliance with UAE liquor regulations and Wynn policies.
• Manage beverage inventory and cost control across multiple gaming outlets, including high-volume bars and private gaming lounges.
• Collaborate on the design and execution of beverage service for gaming special events, tournaments, and VIP activations, working closely with the gaming marketing and events teams.
• Monitor internal and external trends, innovations, and best practices in gaming beverage service, applying relevant insights to enhance operations and guest experience.
• Support financial performance tracking of the gaming beverage department, including P&L analysis and reporting.
• Assist in managing the annual budget for gaming beverage operations, covering all revenue and cost accounts related to bar service and beverage programming.
• Oversee execution of key operational processes such as training, recipe control, service steps, inventory accuracy, and ordering procedures across gaming beverage venues.
• Perform any other duties as assigned by management, contributing to the overall excellence of the gaming’s Food & Beverage experience.
  
  

About You

The ideal candidate for this position will have the following experience and qualifications:

• A minimum of 5 years’ experience managing bars and high-volume operations, preferably within luxury hospitality or gaming settings.
• Demonstrated ability to oversee inventories for large-scale establishments, including multiple bar outlets and VIP service areas.
• Proven ability to manage inventories of large operations, with a focus on fast-paced, 24/7 environments like gamings.
• Proven track record of fostering strong relationships with employees, guests, and management, including high-profile clientele and gaming patrons.
• Excellent communication and presentation skills, with the ability to engage diverse audiences and support promotional beverage activations.
• Results-driven, with exceptional attention to detail and organizational abilities, especially in dynamic gaming service scenarios.
• A passionate Food & Beverage professional with a deep understanding of current industry trends and gaming-specific service expectations.
