Job Description

The Fish Cleaner is an indispensable role within the restaurant, primarily responsible for preparing fish by cleaning, cutting, and processing them to meet restaurant standards. This position requires a keen eye for detail and adherence to hygiene and safety protocols to ensure that the fish is processed correctly for the restaurant. The Fish Cleaner must be skilled in using various tools and techniques for scaling, filleting, and gutting fish. They also need to work collaboratively with other team members to maintain an efficient workflow, ensuring that each batch of fish meets the company’s quality standards. 


Responsibilities

  • Carefully scale, clean, and gut fish while adhering to safety regulations.
  • Skillfully fillet fish to maximize yield and minimize waste.
  • Work efficiently and accurately to meet production targets and deadlines.
  • Inspect fish for defects or inconsistencies and report findings to supervisors.
  • Use specialized tools and equipment for precise and safe fish processing.
  • Maintain the cleanliness of the workstation and tools following hygiene standards.
  • Package and label processed fish according to restaurant specifications.
  • Assist in inventory management and ordering supplies as needed.
  • Comply with all health, safety, and quality assurance protocols at all times.
  • Collaborate with team members for continuous workflow improvements and efficiency.
  • Communicate effectively with the team and supervisors on operational issues.
  • Participate in training programs to enhance skills and knowledge regularly.

Requirements

  • Prior experience in fish cleaning or related food processing roles is preferred.
  • Proficiency in using fish cleaning tools such as knives and filleting machines.
  • Strong attention to detail and commitment to producing high-quality products.
  • Ability to work in a fast-paced environment while maintaining productivity.
  • Knowledge of food safety and sanitation guidelines is highly desirable.
  • Physical stamina to stand for extended periods and perform repetitive tasks.
  • Excellent teamwork and communication skills to collaborate effectively with colleagues.
