About The Role
The role is responsible for developing, implementing, and improving Emirates Catering’s standards, procedures, and codes of practice. The role ensures benchmarking with global food safety, quality, and Halal standards, while driving regulatory intelligence, innovation, continual improvement, and stakeholder engagement. It serves as the focal point for food safety, Halal compliance, and quality standards across the organisation.
In This Role, You Will
- Lead the development and continuous improvement of food safety, Halal, and quality standards and programmes aligned with international benchmarks (e.g. HACCP, ISO22000, FSSC22000, IFSA). Oversee documentation and standards harmonisation and design of Emirates audit programmes, including auditor calibration, audit tools, risk categorisation, and scoring methodologies. Present key findings to senior leadership and governance forums.
- Monitor and interpret global regulations in food safety and Halal compliance and translate them into operational strategies. Lead horizon scanning initiatives for emerging risks, opportunities, and trends. Act as the primary liaison with regulatory authorities (e.g. Dubai Municipality, Halal certifiers) and escalate compliance risks to senior leadership.
- Design and deliver competency-based training programmes on Emirates food safety, Halal, and quality standards. Ensure training materials are current, effective and aligned with regulatory requirements aligned with regulatory requirements and Group Learning & Talent governance and standards. Maintain the training registry and oversee consistent implementation across all operational units.
- Champion innovation by researching emerging trends and technologies. Integrate digital tools (e.g. blockchain, AI) to strengthen traceability, audit efficiency, performance, and risk management. Develop relevant programs for the future.
- Leverage audit data, customer feedback, and operational metrics to identify trends and drive continuous improvement. Develop dashboards and scorecards to monitor compliance KPIs and supplier performance.
- Collaborate with internal teams (e.g. Procurement, Culinary, Cabin Services) and external stakeholders to embed a culture of compliance. Represent Emirates in industry forums, offering expert recommendations to shape best practices. Provide leadership through mentoring, coaching, and influencing colleagues to uphold compliance standards.
- Manage catering compliance policies covering health, safety, environment, legal, quality and ethics.
Qualification
To be considered for the role, you must meet the requirements below:
- Completed a degree or honours (12+3 or equivalent). A degree in a food-related science would be considered an asset/advantage.
- 8+ years experience in In-flight catering or global food production.
- Experience in developing and implementing a network-wide food safety/quality/risk management framework.
- Demonstrates a thorough understanding of Company policies and procedures, regulations, and Operations specifications.
- Experience in the manufacturing of food environment on a large scale, food safety and quality management systems expertise where regulatory compliance framework experience is an asset.
- A creative and agile approach to workplace challenges.
- Strong scientific writing and analytical skills.
- Experience in In-Flight Services or In-Flight Catering is considered an asset.
