Join La Squadra: SOUS CHEF @ Dubai 🇦🇪 (New Opening)
With Big Mamma’s rapid expansion, we’re taking an exciting step beyond Europe for the very first time - landing in Dubai! We’re looking for a passionate and skilled Sous Chef to join La Squadra and play a key role in the opening of our brand-new trattoria in the heart of the city.
You’ll embody our core values of excellence, meritocracy, entrepreneurship, and authenticity in your day-to-day work. Reporting to the Head Chef, your main areas of responsibility will include:
From creation to plate execution
- Participate in the menu change process alongside the Executive Chefs, contributing to a unique culinary experience.
- Speed and precision at the pass will be your hallmark.
- Ensure every dish is perfect, adhering to the Group's recipes and standards.
- You are the Head Chef’s right hand, ensuring everything is impeccable: compliance with hygiene standards, a well-organized team, and checks always aligned with objectives.
- Manage Food Costs like a true leader: zero waste, flawless inventories, and always on-time orders.
- Plan, organize, and lead the brigade with energy and precision.
- Train and support your team daily, sharing passion and professionalism.
- Build your Squad: your leadership creates harmony and makes the workplace stimulating and positive.

Big Mamma is an Italian restaurant group founded in 2013 by Tigrane Seydoux and Victor Lugger. Our wish is to share the authenticity and warmth of traditional Italian trattorias abroad. All produce is directly sourced from small Italian producers, dishes are 100% homemade, served at affordable prices, in beautifully designed spaces, and with a big smile. Italian cuisine is about the quality of the ingredients, so we’ve partnered with small producers - Prosciutto di Parma from Stefano Borchini, San Marzano tomatoes from Paolo Ruggiero, flour from Antimo Caputo, to say the least!We are currently a team 2.200 employees and the family is still growing, with new openings coming up in 2025 across Europe.In Europe, we currently manage : - 8 trattorias and one food market in Paris : East Mamma, Ober Mamma, Mamma Primi, Big Love, Pizzeria Popolare, Pink Mamma, La Felicità and Libertino.- 1 trattoria in Lille (France): La Bellezza- 1 trattoria in Lyon (France): Carmelo- 1 trattoria in Bordeaux (France): Palatino- 1 trattoria in Marseille (France): Splendido- 5 trattorias in London (UK): Gloria, Circolo Popolare, Ave Mario, Jacuzzi & Carlotta - 1 trattoria in Birmingham: La bellezza - 3 trattoria in Madrid (Spain): Belmondo, Villa Capri , Circolo Popolare- 1 trattoria in Munich (Germany): Giorgia - 1 trattoria in Berlin (Germany): Coccodrillo- 1 trattoria in Hamburg (Germany): Edmondo- 1 trattoria in Monaco (Principality of Monaco) : Giacomo- 1 trattoria in Milan (Italy) : Gloria Osteria- 1 trattoria in Brussels (Belgium) : BarracudaWe launched, in 2020, the new digital food brand: Napoli gang.
