Job Summary

As a Pastry Commis, you will play a dynamic and hands-on role in the heart of our kitchen operations, under the mentorship of senior chefs. This position focuses on foundational food preparation, ensuring high standards of hygiene, and supporting seamless kitchen workflows by rotating across diverse stations. You will measure ingredients and size portions with precision, manage stock and inventory effectively, and assist in maintaining strict food safety and hygiene protocols. Ultimately, your contributions directly enhance the quality and consistency of our culinary offerings, while fostering a collaborative and efficient work environment.

Responsibilities

Work Standards

  • Prepare and cook food according to delegated tasks while strictly adhering to the directions of a senior chef, consistently maintaining the highest standards for quality and presentation.

Ingredient & Portion Control

  • Accurately measure ingredients and portion dishes, proficiently operate high-volume kitchen equipment like grills and deep-fat fryers to ensure consistency.

Cleanliness & Hygiene

  • Maintain immaculate kitchen environments by cleaning preparation areas, cooking surfaces, utensils, and restocking workstations, ensuring compliance with health and hygiene standards.

Stock & Inventory

  • Monitor stock levels and place orders as needed while minimizing spoilage and supporting food cost management.

Procedures & Compliance

  • Execute daily and weekly cleaning and safety procedures, perform temperature checks, and label food correctly to adhere to regulatory requirements.

Hygiene & Safety

  • Uphold personal hygiene, uniform standards, and HACCP protocols, diligently completing all requisite cleaning tasks and documentation.

Delivery & Storage

  • Assist in receiving, inspecting, and safely storing food deliveries in accordance with company protocols.

Menu & Stock Management

  • Develop an understanding of menu planning principles and the importance of adhering to sound stock control practices under FEFO guidelines.

Kitchen Operations

  • Perform assigned opening and closing duties, while contributing to all cleanliness or maintenance tasks mandated by senior management.

Health & Safety

  • Demonstrate full awareness of health, safety, and hygiene regulations, including proper use of workplace chemicals, and be prepared to respond effectively during emergencies.

Food Safety & Compliance

  • Ensure full adherence to company safety, sanitation, and compliance policies and actively maintain a safe working environment.

Training & Development

  • Participate regularly in training and workshops to foster professional development and skill enhancement.

Qualifications

Essential

  • Basic Hospitality or Catering training or a foundation degree in Culinary Arts Management
  • Previous on-the-job experience or apprenticeship in food preparation and kitchen organization
  • Proficient basic cooking skills, including precise knife skills, food preparation (sauces, salads, pastries, roasting, etc.), and effective multitasking under pressure with speed and accuracy
  • Strong operational familiarity with kitchen equipment
  • Fluent English communication skills
  • Capability to work with employees of diverse national backgrounds and cultural sensibilities

Desirable

  • Diploma in Hospitality & Catering or Professional Cookery, or a certificate in additional international cuisine
  • At least two years’ of experience working in a restaurant or hotel kitchen setting
  • Versatility in performing duties across various kitchen stations (vegetable, meat, fish, pastry, butchery)
  • Meticulous attention to detail with the ability to quickly learn and adapt lessons into practice immediately
  • Developed physical stamina and mental tenacity to handle long working hours, split shifts, and high-pressure service periods
  • Strong commitment to maintaining kitchen cleanliness and safety standards
  • Creative abilities to transform raw into appealing food items while preserving culinary essence
  • Experience managing time efficiently in fast-paced culinary environments
