We are seeking a detail-oriented and analytical Cost Controller to join our finance team. The successful candidate will support cost management and financial reporting across hotel operations, ensuring accurate recording of costs, timely reporting, and effective collaboration with operational teams to drive efficiency and profitability.
Key Responsibilities
Our successful F&B Cost Controller …
Controls and records the flow of goods between Food and Beverage outlets as well as issues from stores to user departments.
Checks the receiving voucher against the supplier’s invoice and purchase order for accuracy.
Ensures supplier’s tax invoices are compliant with the FTA guidelines.
Production of daily food flash cost of sales reports
Ensures that the 10, 20 days and monthly food & beverage stock counts are performed as per company policy and procedures.
Costing of all recipes before implementing a new dish on a menu to ensure right pricing.
Analysis of the monthly sales statistics and highlighting slow moving items to the responsible head of department.
Analyse outlet activity on a monthly basis. The analysis should include revenue, cost of sales and productivity.
Prepares the month end closing reports for the following: food, beverage, and tobacco, general stock and operating supplies.
Oversee the management of hotel stores and ensure the stockholding is in line with business levels.

Person Specification - Skills And Experience
Previous experience in F&B cost control, financial reporting or accounting roles within hospitality or a related sector preferred.
Strong numerical and analytical skills with attention to detail and accuracy.
Good knowledge of budgeting, variance analysis and inventory valuation methods.
Proficient in Excel and comfortable using accounting or hotel property management systems; experience with Sun Systems and/or finance systems advantageous.
Effective communication skills; able to present financial information clearly to non-financial colleagues.
Organised, able to prioritise workload and meet deadlines in a fast-paced environment.
Problem-solving mindset and ability to work both independently and as part of a team.
Qualifications And Training
basic knowledge of financial management, budgets and cost controls, sound MS Office skills (Word, Excel, and Outlook)Relevant accounting or finance qualification
strong communication skills.
Experience of or training in inventory control, stocktaking procedures and cost accounting is advantageous.
Full on-the-job training will be provided on company systems, internal procedures and reporting standards.
A finance related tertiary qualification will be advantageous
