The Local Indian Chef will assist and act as a right hand to the Sous Chef. He/she will be responsible for preparing and producing food items in the Indian Section, a la carte, buffets banquets, etc, according to specified requirements and brand standards set by the Hotel.

What will I be doing?

As an Indian Chef (Local), you will be responsible for performing the following tasks to the highest standards:

Plan, prepare, and implement high-quality Indian food products and set-ups in all areas of the restaurant.

  • Work seamlessly with Indian recipes, standards, and plating guides to ensure authenticity and consistency.
  • Maintain all HACCP aspects within the kitchen operation.
  • Use appropriately all kitchen equipment, tools, and machines.
  • Focus on the continuous improvement of training manuals and standard operating procedures (SOPs) specific to Indian cuisine.
  • Participate actively in daily chef briefings and monthly culinary meetings to improve operations, achieve targets, and enhance communication.
  • Work on offsite catering or banqueting events when required.
  • Complete culinary or operational tasks assigned outside the main kitchen area.
  • Assist in inventory taking and maintain accurate stock levels of Indian spices, herbs, and ingredients.
  • Be knowledgeable of hotel occupancy, upcoming events, and food forecasts.
  • Prepare traditional and contemporary Indian menus as requested, ensuring dishes are prepared and presented on time.
  • Develop new Indian dishes for menu tastings, promotions, and food photography.
  • Control assigned kitchen stations, ensuring smooth and efficient production.
  • Coordinate with the Stewarding team to maintain cleanliness, hygiene, and minimize breakages.
  • Respond effectively to guest requests and feedback, especially regarding dietary preferences and spice levels.
  • Learn and adapt to new culinary trends and constructive feedback.
  • Manage purchasing and control of Indian food production to minimize waste.
  • Maintain at all times a professional and positive attitude toward team members and supervisors.
  • Ensure compliance with hotel rules and regulations, and enforce the same among kitchen staff.
  • Coordinate, organize, and participate in all Indian food production activities.
  • Check and follow up on the assembling of ingredients and equipment for à la carte, buffet, and special Indian menus, maintaining portion control and costing standards.
  • Maintain discipline and proper work practices for self and the team.
  • Ensure high standards of personal hygiene, clean uniforms, and sanitation in all work areas.
  • Be aware of food contamination risks and ensure proper storage and labeling of Indian ingredients and cooked items.
  • Report operational issues to the Executive Chef or Executive Sous Chef and take appropriate action.
  • Implement changes in recipes, menus, or promotional activities as directed.
  • Work closely with the Executive Sous Chef in determining daily quantities and ingredient requirements.
  • Exercise maximum control on wastage to achieve optimum profitability.
  • Check all kitchen equipment and report any faults to the Engineering or Maintenance team.
  • Ensure recipes, costing sheets, and inventory lists for Indian dishes are regularly updated.
  • Monitor food quality, quantity, and presentation to maintain authenticity and consistency.
  • Supervise and mentor team members, selecting those who exhibit professionalism and passion for Indian cuisine.
  • Manage training to ensure all cooks and commis are certified and competent in their positions.
  • Oversee the entire Indian kitchen operation to ensure timely and correct preparation of all dishes.
  • Maintain the highest standards of cleanliness, hygiene, and kitchen maintenance.
  • Control and monitor food costs to maximize outlet profit and guest satisfaction.
  • Review team members’ timesheets and ensure accuracy of attendance and breaks.
  • Promote teamwork, collaboration, and a positive work environment within the kitchen.
  • Ensure all staff understand and adhere to hotel policies and procedures.
  • Carry out any other reasonable duties and responsibilities as assigned by management.
  • What are we looking for?


A Local Indian Chef, serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • Minimum 3–5 years of experience in Indian cuisine, preferably in a hotel, fine-dining restaurant, or multi-cuisine operation.
  • Strong knowledge of regional Indian cuisines and traditional cooking techniques.
  • Skilled in menu planning, food presentation, and portion control with a focus on authentic flavors.
  • Local candidate with proven exposure in Indian cuisine and strong ability to lead and train a team.
  • Strong understanding of food safety, sanitation, and HACCP standards.
  • Ability to manage food cost, inventory, and waste control effectively.
  • Proficient in recipe development and standardization.
  • Ability to work under pressure in a fast-paced environment
