Job Description
Job Objectives
Manage the Benjarong kitchen to produce consistently authentic, Thai inspired cuisine of excellent quality. Lead a specialized team to uphold the “Benjarong” legacy—balancing traditional Thai flavors with modern presentation—while strictly adhering to Dusit’s high standards for food safety, hygiene, and guest satisfaction.
Primary Responsibilities
Culinary Excellence: Prepares and ensures the delivery of authentic Thai flavors and presentation standards. Personally, tests food for seasoning, texture, and freshness to ensure every dish meets the Benjarong signature.
Operational Leadership: Under the supervision of the Executive Sous Chef, directs the daily operations of the Benjarong kitchen to promote a seamless guest experience.
Inventory & Mis-en-place: Oversees the sourcing and preparation of specialized Thai ingredients. Ensures all herbs, spices, and pastes are well-stocked and meet quality benchmarks.
Standard Maintenance: Maintains world-class sanitation and hygiene standards within the Benjarong section, ensuring the kitchen environment reflects the elegance of the restaurant.
Innovation & Trends: Analyzes market trends and guest feedback specifically regarding Thai specialty dining to continuously evolve the menu and guest offerings.
Resource Management: Monitors and reduces food waste and utility consumption (energy/water) through staff training and meticulous portion control.
Team Development: Conducts daily briefings and provides specialized training in Thai culinary techniques to junior staff.
Administrative Oversight: Manages duty rosters based on business volume, handles leave requests, and oversees performance evaluations and recruitment for the outlet.
Brand Ambassadorship: Acts as the primary face of Benjarong’s culinary team, embodying “Thai Graciousness” and maintaining a professional, well-groomed appearance at all times.

Thai Graciousness: Represents the Dusit brand values by delivering an exceptional guest experience rooted in Thai hospitality.
Culture Carrier: Fully embraces and cascades the company’s “Proud to belong and to contribute” vision to the Benjarong team.
Confidentiality: Protects all intellectual property, including proprietary Benjarong recipes and guest data.
Job Requirements
Experience: At least 3–5 years of Chef experience in a 5-star hotel or a top-tier Thai specialty restaurant.
Technical Mastery: Deep, expert knowledge of Authentic Thai Cuisine (Royal Thai techniques, flavor balancing of sweet, sour, salty, and spicy).
Compliance: Strong, practical understanding of HACCP and international food safety standards.
Financial Acumen: Proven track record in cost control (food, labor, and equipment) to meet hotel financial goals without compromising quality.
Leadership: Demonstrated passion for menu engineering, creative presentation, and mentoring a diverse kitchen team.
Supportive Functions
This position may be required to perform a combination of supportive functions, such as participating in guest-facing cooking demonstrations or supporting banquet events, as determined by the Executive Chef based on hotel needs.
