Responsibilities
New Product Development/ Product Improvement/ Reformulation – Traditional Deli LIne
Led new product development, reformulation, and product improvement projects from laboratory trials to commercialization.
Planned and managed laboratory-scale and batch trial schedules to ensure timely project execution.
Supervised product stability testing, including freeze-thaw, pH monitoring, sensory evaluation, and microbiological testing.
Reviewed and validated trial data, sensory evaluation results, time-and-motion studies, and product specifications.
Established and maintained product specifications, including pH, salt, Brix, yield, and other quality parameters.
Reviewed manufacturing process flows, packaging specifications, ingredient lists, cooking instructions, and benchmark reports.
Ensured completion of all R&D technical requirements prior to product launch.
Led alternative raw material and supplier development through product evaluation and qualification.
Monitored supplier sample performance and maintained evaluation records for approvals and rejections.
Initiated and led process improvement and continuous improvement projects to optimize product quality, manufacturing efficiency, and cost.
Collaborated with Production, Engineering, Finance, QA, and toll manufacturers on process validation, machine commissioning, and yield improvement.
Led toll manufacturer development projects by coordinating trial activities and reviewing technical reports.
Managed R&D documentation, including Bill of Materials (BOM), formula cards, controlled documents, and technical specifications.
Reviewed documentation for FDA Certificate of Product Registration (CPR) submissions.
Maintained updated product specifications and technical records.
Managed laboratory supplies, purchase requests, and overall laboratory organization.
Administered SAP Material Master activities, including material code creation, BOM uploads, and master recipe maintenance.
Coordinated packaging development with Marketing, including artwork, labels, ingredient declarations, cooking instructions, and packaging specifications.
Led the company's Allergen Management Program.
Conducted technical training for cross-functional teams and provided R&D support to Marketing, QA, Production, Procurement, and Engineering.
Education
Bachelor’s or have master’s degree in Food Science, food Technology, Chemistry, Biology or any related field or has minimum of 10 years experience in role in Meat Manufacturing industry
Experience
Proven experience minimum of 5 years in R&D Roles within the food manufacturing industry, with a track record of successful product development.
Skills
Strong understanding of R&D principles, methodologies, and product development cycles
Ability to interpret experimental data and translate results into actionable insights
Knowledge of laboratory techniques, equipment, and testing protocols
Familiarity with industry standards (e.g., ISO, GMP, GLP, HACCP – as applicable)
Ability to supervise formulation, process optimization, or prototype development
Documentation skills for technical reports, SOPs, and validation protocols
