Hygiene Manager

We are currently seeking a Hygiene Manager to join our vibrant team; you infuse our culinary team with a distinctive blend of creativity, precision and a deep-seated commitment to culinary excellence. 

Ensure compliance with food safety laws and guidelines (such as FSSAI, HACCP, ISO standards, as required)

Implement and monitor Food Safety Management Systems (FSMS), Good Production Practices (GPP), and Good Hygiene Practices (GHP)

Collection & microbial evaluation of various samples — food, ice, water, several swabs and any other as relevant.

 Coordination with pest control service providers, record maintenance

Conduct regular inspections of food preparation, storage, and service areas to ensure cleanliness and safety. This includes main stores and stores of all F&B outlets

Perform internal audits to check compliance with local regulatory laws and standards

Inspect utensils, equipment, and food storage conditions for hygiene and safety

Train kitchen and service staff on proper food handling, personal hygiene, and sanitation procedures

Develop and update training materials and checklists for food safety practices

 Oversee proper food handling practices to prevent cross-contamination and foodborne illnesses.

Monitor food storage conditions, including temperature control and expiry dates, to ensure food safety.

       Maintain up-to-date records of food safety checks, cleaning schedules, temperature

Prepare   and   manage documentation required for regulatory compliance and  Inspections.

 Investigate foodborne illness complaints or outbreaks, collect samples, and trace

      Sources of contamination

  Take corrective actions and report findings to management and regulatory authorities if

       Needed.

Ensure the hotel complies with all relevant food safety legislation and standards

 Liaise with external inspectors (such as Environmental Health Officers) during official

       Audits and inspections

• Proven experience as a Sous Chef or similar role
• Excellent communication and the ability to lead and work well with others
• Hands-on approach with a can-do work style
• Commitment to delivering exceptional guest service with a passion for the hospitality industry.
• Ability to find creative solutions taking ownership for duties and tasks assigned.
• Personal integrity, with the ability to work in an environment that demands excellence.
• Experience of working with IT systems on various platforms
